做法:春笋切成片后加少许盐捞出后用清水浸泡,生姜切(qiē )片,葱切成段。锅烧热,倒(dǎo )入2勺(sháo )油,放入生姜、春笋、牛肉片、葱(cōng )段(duàn )翻炒1分钟左(zuǒ )右。再(zài )加(jiā )入生抽、老抽(chōu )、蚝油(yóu )翻炒均匀,加入少量(liàng )清水(shuǐ )半(bàn )掩(yǎn )住春笋,盖(gài )上锅盖大火(huǒ )煮开后转(zhuǎn )中火。煮到水快熬(áo )干的时(shí )候加入盐,翻(fān )炒均匀稍收汁时盖上锅(guō )盖焖。
