做法:春笋切成片后加少许盐捞出后(hòu )用清(qīng )水浸泡,生姜切片,葱切成段。锅(guō )烧热(rè ),倒入2勺油,放入生姜、春笋、牛肉片(piàn )、葱段翻炒1分(fèn )钟左右。再加入生抽、老(lǎo )抽、蚝油翻炒(chǎo )均匀,加入(rù )少(shǎo )量(liàng )清(qīng )水半掩住春(chūn )笋,盖上锅盖大火煮开后转中火。煮到(dào )水(shuǐ )快熬(áo )干的时(shí )候加入盐,翻炒均匀稍收汁时盖上锅盖焖(mèn )。
