做法:春笋切(qiē )成片后加(jiā )少许盐捞出后用清(qīng )水浸泡(pào ),生姜切片(piàn ),葱切成(chéng )段。锅烧热,倒入2勺油,放入生姜、春(chūn )笋、牛肉片(piàn )、葱段翻炒1分钟左右。再加入生抽、老抽、蚝(háo )油翻炒均匀,加入少(shǎo )量清水(shuǐ )半掩(yǎn )住春笋,盖上(shàng )锅盖大(dà )火煮开后转中火。煮到水(shuǐ )快熬干的时候加入盐,翻(fān )炒均匀(yún )稍收汁时盖上锅盖(gài )焖。
