做法:洗(xǐ )净宰好鲫鱼,洗净淮山和薏米。用清水把陈(chén )皮泡软,拍裂(liè )一小块姜,热锅,用姜(jiāng )块在(zài )锅上擦(cā )一遍,放两勺油,待油六成热下(xià )鱼,煎至(zhì )微黄(huáng )。煮(zhǔ )沸瓦煲里的清水,放入煎煮好的鲫鱼和其他材料(liào ),武火煮沸,转(zhuǎn )中(zhōng )小火(huǒ )煲一个半小(xiǎo )时,下(xià )盐调味即可品尝。
