做法:春笋切(qiē )成片后(hòu )加少(shǎo )许盐捞出后用清水(shuǐ )浸泡,生姜切片,葱(cōng )切(qiē )成段。锅烧(shāo )热(rè ),倒入2勺油(yóu ),放入生姜、春(chūn )笋、牛肉片(piàn )、葱段翻炒1分钟(zhōng )左右。再加入生抽、老(lǎo )抽、蚝(háo )油翻炒均匀(yún ),加入少量清水半(bàn )掩住春笋,盖上锅盖大火煮开后转中火(huǒ )。煮到水快熬干的时候加(jiā )入(rù )盐,翻炒均匀稍收汁时盖上锅盖焖。
