做法:春笋切成片后加少许盐捞出后用清(qīng )水浸泡,生(shēng )姜切(qiē )片,葱切成段。锅烧(shāo )热,倒入(rù )2勺油,放入生姜、春笋、牛肉(ròu )片、葱(cōng )段翻炒(chǎo )1分钟左(zuǒ )右。再加入(rù )生(shēng )抽、老抽(chōu )、蚝(háo )油翻炒均匀,加入少量(liàng )清水半掩住春笋,盖(gài )上(shàng )锅盖大火煮开后转(zhuǎn )中火。煮到水快熬干的时候加入盐(yán ),翻炒均匀稍收汁时(shí )盖上锅盖焖。
