做法:春笋切成(chéng )片后(hòu )加少许(xǔ )盐捞出后用(yòng )清水浸泡,生姜切片,葱切成段(duàn )。锅烧热,倒入(rù )2勺(sháo )油,放入生姜、春笋、牛肉片、葱段(duàn )翻炒1分(fèn )钟左右。再加入(rù )生抽、老抽、蚝油翻炒均匀,加(jiā )入(rù )少量清水半掩(yǎn )住春笋,盖上锅(guō )盖大火煮(zhǔ )开后转中火。煮到水快熬干的时候加入盐,翻炒均匀(yún )稍收汁时盖(gài )上锅盖(gài )焖。
