做法(fǎ ):春笋(sǔn )切成片后加少许盐捞出后用清水浸泡,生姜(jiāng )切片,葱切成段。锅烧热,倒入(rù )2勺油,放入生姜、春(chūn )笋、牛(niú )肉片(piàn )、葱段翻炒1分钟左右。再加入(rù )生抽、老抽(chōu )、蚝(háo )油翻炒均匀,加(jiā )入少量清水(shuǐ )半掩(yǎn )住春笋,盖上锅盖大火煮开后转中火。煮到(dào )水快熬干的时候加入盐,翻炒(chǎo )均匀稍收汁时(shí )盖(gài )上锅盖焖。
