做法:洗净宰好鲫鱼,洗(xǐ )净淮山和薏米。用清水把陈皮泡软,拍裂(liè )一小块姜,热锅,用姜块在锅上(shàng )擦一(yī )遍,放两勺油,待油六(liù )成(chéng )热下鱼,煎至微黄。煮沸瓦煲里的清(qīng )水,放入煎(jiān )煮好的鲫鱼和其(qí )他(tā )材料(liào ),武火煮(zhǔ )沸,转中小火煲一(yī )个半(bàn )小时,下盐(yán )调味(wèi )即可品尝。
