做(zuò )法:春笋切成片后加少许(xǔ )盐捞出(chū )后用(yòng )清水浸泡(pào ),生姜切片,葱切成段(duàn )。锅烧热,倒入2勺油,放入生姜、春(chūn )笋、牛肉片、葱段翻(fān )炒1分钟左右。再(zài )加(jiā )入生抽、老抽、蚝油(yóu )翻炒(chǎo )均(jun1 )匀,加入少量清水半掩住春笋,盖上锅盖大火煮开(kāi )后转(zhuǎn )中火。煮到水快熬干的时(shí )候加(jiā )入盐,翻炒均匀稍收汁时(shí )盖上锅(guō )盖焖。
