做法:春笋切成片(piàn )后(hòu )加少许盐捞出后用清水(shuǐ )浸(jìn )泡,生姜切片,葱切(qiē )成段。锅烧热,倒入(rù )2勺油,放入生姜、春笋、牛肉片(piàn )、葱段翻炒(chǎo )1分钟左右。再加(jiā )入生抽、老抽、蚝(háo )油翻(fān )炒均匀,加入(rù )少量清水(shuǐ )半掩住春(chūn )笋,盖上锅盖大火煮开后(hòu )转中火。煮到(dào )水快熬干的时候加(jiā )入盐(yán ),翻(fān )炒均匀稍收汁时(shí )盖上锅盖焖。
