做法:春笋(sǔn )切成片后加少许盐(yán )捞出后用清水浸泡,生姜切片(piàn ),葱切成段。锅烧热,倒入2勺油,放(fàng )入生(shēng )姜、春笋、牛肉片、葱段翻(fān )炒1分钟左右。再加入生抽、老抽(chōu )、蚝油翻炒均匀,加入(rù )少量(liàng )清水(shuǐ )半掩住春(chūn )笋,盖上锅(guō )盖大火煮开后转中火。煮到(dào )水(shuǐ )快熬干的时候加入盐,翻炒(chǎo )均匀稍收汁时(shí )盖(gài )上锅(guō )盖(gài )焖。
