做法:洗净(jìng )宰(zǎi )好鲫(jì )鱼,洗净淮(huái )山和薏米。用(yòng )清水把陈皮泡软,拍裂一小块姜(jiāng ),热锅,用姜块(kuài )在(zài )锅(guō )上擦一遍,放两勺油,待(dài )油六成热下鱼,煎至微黄。煮(zhǔ )沸瓦煲(bāo )里的清水,放入煎煮好的鲫鱼(yú )和其他材料(liào ),武火煮沸,转(zhuǎn )中小火煲一(yī )个半小(xiǎo )时,下盐调味即可品尝。
