做法:春笋切成(chéng )片后加少许盐捞出后用清水浸泡,生姜(jiāng )切(qiē )片,葱切成段。锅烧(shāo )热,倒入(rù )2勺油,放入生(shēng )姜、春笋、牛肉片、葱段翻炒(chǎo )1分钟(zhōng )左右。再加入生抽、老抽、蚝油翻炒均匀,加入少(shǎo )量清(qīng )水半掩住春笋,盖上锅(guō )盖大火(huǒ )煮开后转中火。煮到(dào )水快熬干的时候加(jiā )入盐,翻炒均匀稍收汁时盖(gài )上(shàng )锅(guō )盖焖(mèn )。
