做(zuò )法:春笋切成(chéng )片后加少许盐(yán )捞(lāo )出后用清水浸泡,生姜(jiāng )切片(piàn ),葱切成段。锅(guō )烧热,倒入(rù )2勺(sháo )油,放入生(shēng )姜、春笋、牛肉片、葱段(duàn )翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水(shuǐ )半掩住春笋,盖上锅盖大(dà )火煮开后转中火。煮(zhǔ )到水快熬干的时候加入盐,翻炒均(jun1 )匀稍收汁时(shí )盖上锅盖(gài )焖。
