做法:春笋(sǔn )切成片(piàn )后加少许盐捞出(chū )后用(yòng )清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春(chūn )笋、牛肉(ròu )片、葱(cōng )段翻炒(chǎo )1分钟左右。再加入生抽、老抽、蚝(háo )油翻炒均匀(yún ),加入少量清水半掩(yǎn )住春笋,盖(gài )上锅(guō )盖大火煮开后转中火。煮到(dào )水快熬干的时(shí )候加入盐,翻炒均(jun1 )匀稍收(shōu )汁时盖上锅(guō )盖焖(mèn )。
