做法:洗净宰好鲫鱼,洗净淮(huái )山和薏米(mǐ )。用清水把陈皮(pí )泡软,拍裂一小块(kuài )姜,热锅(guō ),用姜块在锅(guō )上擦一遍(biàn ),放两勺(sháo )油,待油六成(chéng )热(rè )下鱼(yú ),煎至微黄。煮(zhǔ )沸瓦煲里的清水(shuǐ ),放入煎煮(zhǔ )好(hǎo )的鲫鱼和其他材料,武火煮(zhǔ )沸,转中小火(huǒ )煲一个半小时,下(xià )盐调味即可品尝。
