做法:春(chūn )笋切成片后加少许盐捞出后用清水(shuǐ )浸泡,生姜(jiāng )切片(piàn ),葱(cōng )切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻(fān )炒1分钟左右。再加入(rù )生抽、老抽(chōu )、蚝油翻(fān )炒均匀,加入少量清水半掩住(zhù )春(chūn )笋,盖上锅盖大火煮开后转中火。煮到水(shuǐ )快熬干的时候加(jiā )入盐,翻炒均匀稍(shāo )收汁(zhī )时盖(gài )上锅盖(gài )焖。
