做法:洗净宰好(hǎo )鲫鱼(yú ),洗净淮(huái )山和(hé )薏米。用清水(shuǐ )把(bǎ )陈皮泡软,拍裂一小块姜,热锅,用姜块在锅上擦(cā )一遍,放两勺油,待油六(liù )成热(rè )下(xià )鱼(yú ),煎至微黄。煮(zhǔ )沸瓦煲里(lǐ )的清水,放入煎煮(zhǔ )好的鲫鱼和其他材料,武火煮沸,转中小火煲一(yī )个半小时(shí ),下盐调味即可品尝(cháng )。
