做法:春笋切成片后加少(shǎo )许盐捞出(chū )后用清水(shuǐ )浸泡,生姜(jiāng )切片(piàn ),葱(cōng )切(qiē )成(chéng )段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左(zuǒ )右。再加(jiā )入生抽、老抽、蚝油翻(fān )炒均匀(yún ),加入少量清水半掩住春笋,盖上锅(guō )盖大(dà )火煮开后转(zhuǎn )中火。煮到水快熬干的时候加(jiā )入盐,翻炒均匀稍收汁时盖上锅(guō )盖焖。
