做法:春笋切成片后加少许盐捞出后用清水浸泡(pào ),生(shēng )姜切片,葱切成段(duàn )。锅烧热(rè ),倒入(rù )2勺油,放入生姜、春(chūn )笋(sǔn )、牛肉(ròu )片、葱段(duàn )翻炒1分钟左右。再加入生抽、老抽、蚝油翻(fān )炒(chǎo )均匀,加入少量清水半掩住春笋,盖上(shàng )锅盖(gài )大(dà )火煮开后转中火。煮到水(shuǐ )快(kuài )熬干的时候(hòu )加(jiā )入(rù )盐,翻炒均(jun1 )匀稍收汁时盖上锅盖焖。
