做法:洗净宰好鲫鱼,洗净淮山和(hé )薏米。用(yòng )清(qīng )水(shuǐ )把陈皮泡软,拍裂一小(xiǎo )块姜(jiāng ),热锅,用(yòng )姜块在(zài )锅上擦一遍,放(fàng )两勺油,待油六(liù )成热下鱼,煎至微(wēi )黄。煮沸瓦煲(bāo )里的清(qīng )水,放入煎煮好的鲫鱼和其他材料,武火(huǒ )煮沸,转中小(xiǎo )火煲一(yī )个半小时,下盐(yán )调味即(jí )可品尝。
