做法:春(chūn )笋切成片(piàn )后加少许盐捞出后用清(qīng )水浸泡(pào ),生姜切片,葱切成段。锅烧(shāo )热(rè ),倒入2勺(sháo )油(yóu ),放入生姜、春笋、牛肉片、葱段(duàn )翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水半掩住春笋,盖(gài )上(shàng )锅(guō )盖大火煮开(kāi )后转(zhuǎn )中(zhōng )火。煮到水快熬干的时候加(jiā )入盐,翻炒(chǎo )均匀稍收汁时盖上锅盖焖。
