做法(fǎ ):春笋(sǔn )切成(chéng )片后加少(shǎo )许盐捞出后用(yòng )清水浸(jìn )泡,生姜切(qiē )片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛(niú )肉片、葱段翻炒1分(fèn )钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水半(bàn )掩住春笋,盖上锅盖大火煮开后转中火。煮(zhǔ )到(dào )水(shuǐ )快熬(áo )干的时候加(jiā )入(rù )盐,翻炒均匀稍收汁时盖(gài )上锅(guō )盖焖(mèn )。
