做法(fǎ ):洗净宰(zǎi )好鲫鱼,洗净(jìng )淮山(shān )和薏(yì )米。用清水(shuǐ )把陈皮泡软,拍(pāi )裂一(yī )小块姜,热锅,用姜块在锅上擦一遍,放两勺油,待油六成热下鱼,煎至(zhì )微黄。煮沸瓦(wǎ )煲里的清(qīng )水,放入煎煮好的鲫鱼和其他材料,武火煮(zhǔ )沸,转中(zhōng )小(xiǎo )火煲一个(gè )半小(xiǎo )时,下盐调味即可品尝(cháng )。
