做法:洗(xǐ )净(jìng )宰好鲫鱼(yú ),洗净淮山和薏米(mǐ )。用清(qīng )水把陈皮(pí )泡软,拍裂一小块姜,热锅,用(yòng )姜块在锅上擦一遍,放两(liǎng )勺油,待油六成热下鱼,煎至微黄(huáng )。煮沸瓦煲里(lǐ )的清水(shuǐ ),放入煎煮好的鲫鱼和其(qí )他(tā )材(cái )料(liào ),武火煮沸,转中小火煲(bāo )一(yī )个(gè )半小时,下盐调味即可品尝。
