做法:春笋(sǔn )切成片后加少(shǎo )许盐(yán )捞(lāo )出后用清水(shuǐ )浸泡,生姜切(qiē )片,葱切成(chéng )段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片(piàn )、葱段(duàn )翻炒1分钟左右。再加入(rù )生抽、老抽、蚝(háo )油翻炒均匀(yún ),加入少量清(qīng )水半掩住(zhù )春笋(sǔn ),盖上锅盖大火煮(zhǔ )开(kāi )后转中火(huǒ )。煮到(dào )水快熬干的时候加入盐,翻炒均匀稍收汁时盖上锅盖焖。
