做法(fǎ ):春笋切成片后加少许盐捞出后用(yòng )清水浸泡,生姜切(qiē )片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉(ròu )片、葱段翻(fān )炒1分钟左右。再加入生抽、老抽(chōu )、蚝油翻炒均匀,加(jiā )入(rù )少(shǎo )量(liàng )清(qīng )水半掩住春笋,盖(gài )上锅盖大火煮开后(hòu )转中火。煮到水快熬干的时(shí )候加(jiā )入盐,翻炒均(jun1 )匀稍收汁时盖上锅盖(gài )焖(mèn )。
