做法:春笋切(qiē )成片(piàn )后加少许盐捞出后用清(qīng )水浸泡,生姜切片,葱切成段。锅烧热,倒(dǎo )入2勺(sháo )油,放入(rù )生姜、春笋、牛肉片(piàn )、葱段翻炒(chǎo )1分钟(zhōng )左右。再加入生抽(chōu )、老抽、蚝油翻炒(chǎo )均匀,加入少量清水半掩(yǎn )住春(chūn )笋,盖上锅(guō )盖大火煮开后转中(zhōng )火。煮到(dào )水快熬干的时(shí )候(hòu )加(jiā )入盐,翻炒均匀稍收汁时盖上锅盖焖。
