做(zuò )法:春笋(sǔn )切成(chéng )片后加少(shǎo )许盐捞出后(hòu )用清水(shuǐ )浸泡,生姜(jiāng )切片,葱切成段。锅烧热,倒(dǎo )入2勺油,放入生姜、春笋(sǔn )、牛(niú )肉片、葱段(duàn )翻(fān )炒1分(fèn )钟左右。再加入(rù )生(shēng )抽、老抽、蚝油翻炒均匀,加入少量清水半掩住(zhù )春笋,盖上锅盖大火煮开后转中火。煮到水快熬干的时(shí )候加入盐(yán ),翻(fān )炒均匀稍(shāo )收汁时盖上锅盖焖。
