做法:春笋切成片后加少许盐(yán )捞出后用清水浸泡,生姜切片,葱(cōng )切成(chéng )段。锅(guō )烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒(chǎo )1分钟(zhōng )左右。再加入生抽、老抽、蚝油(yóu )翻炒(chǎo )均匀,加入少量(liàng )清水半掩住春(chūn )笋,盖(gài )上锅(guō )盖大火煮开后转中(zhōng )火。煮到水(shuǐ )快熬干的时候(hòu )加入盐(yán ),翻炒均(jun1 )匀稍收(shōu )汁时(shí )盖上锅盖焖。
