做法(fǎ ):洗净宰好鲫鱼,洗(xǐ )净(jìng )淮山和薏米。用清水把陈皮泡软,拍(pāi )裂一小块姜,热锅,用(yòng )姜(jiāng )块在锅上擦一遍(biàn ),放两勺(sháo )油,待(dài )油六(liù )成热下鱼,煎(jiān )至微(wēi )黄。煮沸瓦煲里的清水,放入煎煮好的鲫鱼和其他材(cái )料,武(wǔ )火(huǒ )煮沸,转中小火煲一个半(bàn )小时,下盐调味即可(kě )品尝。
