做(zuò )法:春笋切成片(piàn )后加少许盐捞出后用(yòng )清水浸泡(pào ),生姜切片,葱切成段。锅烧热,倒入2勺油,放入生(shēng )姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老(lǎo )抽、蚝(háo )油翻炒均匀,加入少量(liàng )清水半掩住春笋,盖(gài )上(shàng )锅盖大(dà )火煮开后转中火。煮到水快熬干的时(shí )候加(jiā )入盐,翻炒(chǎo )均匀稍收汁(zhī )时盖上(shàng )锅盖焖。
