做法:春笋切成片后加少许盐(yán )捞出(chū )后用清水浸泡,生姜(jiāng )切(qiē )片,葱切成段。锅烧热(rè ),倒入2勺油,放入生姜、春笋、牛肉片、葱段翻(fān )炒1分钟左右。再加入(rù )生抽、老抽、蚝(háo )油翻炒均(jun1 )匀(yún ),加入少量(liàng )清水半(bàn )掩住春笋,盖(gài )上锅盖大火煮开后转(zhuǎn )中火。煮(zhǔ )到水快(kuài )熬干的时候加入盐,翻(fān )炒均匀稍收汁时盖上(shàng )锅(guō )盖焖。
