做法:洗净宰好鲫鱼(yú ),洗净淮山和薏(yì )米。用清水(shuǐ )把陈皮泡软,拍裂一小块姜(jiāng ),热锅,用姜(jiāng )块在锅上擦一遍,放两勺油(yóu ),待油六成热下(xià )鱼,煎至微黄。煮(zhǔ )沸瓦(wǎ )煲里(lǐ )的清水,放入煎煮(zhǔ )好的鲫(jì )鱼和其他材料,武火煮沸,转(zhuǎn )中小(xiǎo )火煲(bāo )一个半小时,下盐调味(wèi )即可品尝。
