做法:春笋切成片后(hòu )加少许盐(yán )捞出后用清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻(fān )炒(chǎo )1分(fèn )钟(zhōng )左右。再加(jiā )入生抽、老(lǎo )抽、蚝油(yóu )翻炒均匀(yún ),加入少量清(qīng )水半掩住春笋,盖(gài )上锅盖大(dà )火煮(zhǔ )开后转(zhuǎn )中火。煮到(dào )水快熬干的时候加(jiā )入盐,翻(fān )炒均匀稍收汁时(shí )盖上锅盖焖。
