做(zuò )法:洗净宰好鲫鱼,洗净淮山和薏米。用清水把陈皮泡软,拍裂(liè )一(yī )小(xiǎo )块姜(jiāng ),热锅(guō ),用姜块在锅上擦一遍,放两勺(sháo )油,待油六成(chéng )热(rè )下鱼,煎至微(wēi )黄(huáng )。煮沸瓦煲里的清水(shuǐ ),放入(rù )煎(jiān )煮好的鲫鱼和其他材料,武火煮沸,转中小火煲一个半小时,下盐调(diào )味即可(kě )品(pǐn )尝。
