做法:春笋切(qiē )成片后加少许盐捞出后用清(qīng )水浸泡(pào ),生姜切片(piàn ),葱(cōng )切成段(duàn )。锅(guō )烧热,倒入2勺油,放入(rù )生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均(jun1 )匀(yún ),加入少(shǎo )量清水半掩住春笋(sǔn ),盖上锅盖大火(huǒ )煮开后(hòu )转(zhuǎn )中火。煮到水快熬(áo )干的时(shí )候加入盐,翻炒均匀稍(shāo )收汁时盖上锅(guō )盖(gài )焖。
