做法(fǎ ):春笋切成片后加少许盐捞出后用清(qīng )水浸泡,生(shēng )姜切(qiē )片(piàn ),葱切成段(duàn )。锅烧热(rè ),倒(dǎo )入2勺(sháo )油,放入生(shēng )姜(jiāng )、春笋、牛肉片、葱段(duàn )翻(fān )炒1分钟左右。再加入生抽、老抽、蚝油(yóu )翻(fān )炒均匀,加入(rù )少量清水(shuǐ )半掩住春笋,盖上(shàng )锅盖大火(huǒ )煮开后转中火。煮到水快熬干的时候加入盐,翻(fān )炒均匀稍收汁时盖上锅盖焖。
