做法:洗净宰(zǎi )好鲫(jì )鱼,洗净淮山(shān )和(hé )薏米。用清水把陈皮泡软,拍裂一小块姜,热锅,用姜块在锅(guō )上擦一遍(biàn ),放两勺油,待油六成热下鱼,煎至(zhì )微黄(huáng )。煮沸瓦煲(bāo )里的清水(shuǐ ),放入煎煮好的鲫鱼(yú )和(hé )其(qí )他材料(liào ),武(wǔ )火煮沸,转中小火煲一个半小时,下盐调(diào )味(wèi )即可品尝。
