做法:洗净宰好鲫鱼,洗净淮(huái )山(shān )和薏(yì )米。用清水把陈皮泡软,拍裂(liè )一小块(kuài )姜(jiāng ),热锅,用姜块在锅(guō )上擦一遍(biàn ),放两勺油,待油六成热下(xià )鱼,煎至微黄(huáng )。煮沸瓦(wǎ )煲里的清水,放入煎煮好(hǎo )的鲫鱼和其(qí )他(tā )材料,武火煮沸,转中小火煲一(yī )个半小时,下盐调味即可品(pǐn )尝。
