做法(fǎ ):春笋切成片后加少(shǎo )许盐捞出后(hòu )用(yòng )清(qīng )水浸泡,生姜切片(piàn ),葱切成段。锅烧热(rè ),倒入2勺油,放入生姜、春笋、牛肉片(piàn )、葱段(duàn )翻(fān )炒1分钟左右。再加入生抽、老抽、蚝(háo )油翻炒均匀,加入少量清水半掩住春(chūn )笋,盖上锅盖大火煮开后转中(zhōng )火。煮到水快(kuài )熬干的时候加(jiā )入盐(yán ),翻炒均匀稍收汁时盖上锅(guō )盖焖(mèn )。
