做法:春笋切(qiē )成片(piàn )后加少许盐捞出后(hòu )用清水浸泡,生(shēng )姜切片,葱切成段。锅烧热,倒入2勺油,放入(rù )生姜、春(chūn )笋、牛肉片(piàn )、葱段翻炒1分钟(zhōng )左右(yòu )。再加入生抽、老(lǎo )抽、蚝油翻炒均匀,加入少量清水(shuǐ )半掩住(zhù )春笋,盖上锅(guō )盖大火煮开后转中(zhōng )火。煮到水快熬干的时候加入盐,翻炒均匀(yún )稍收汁(zhī )时盖上锅(guō )盖焖。
