做法:春笋(sǔn )切成片后加少许盐捞出(chū )后用清水浸泡,生姜切片,葱切(qiē )成(chéng )段。锅烧热,倒入2勺油,放(fàng )入(rù )生姜(jiāng )、春笋、牛肉片、葱段翻(fān )炒1分钟左(zuǒ )右。再加入生抽、老抽、蚝油翻炒均匀,加入少量(liàng )清水半掩住春笋(sǔn ),盖上(shàng )锅盖大火(huǒ )煮开后转中火。煮(zhǔ )到(dào )水快熬(áo )干的时候加入盐,翻炒均匀稍收汁时盖(gài )上锅盖(gài )焖(mèn )。
