做法:春笋(sǔn )切成片后加少许盐(yán )捞出(chū )后用清水浸泡,生(shēng )姜切片,葱切成段。锅烧(shāo )热,倒入2勺油(yóu ),放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生(shēng )抽(chōu )、老抽、蚝油翻炒均匀,加入少量清(qīng )水半(bàn )掩住春笋,盖上锅(guō )盖大火煮(zhǔ )开(kāi )后转中(zhōng )火。煮到(dào )水快熬干(gàn )的时候加入盐,翻炒均匀稍收汁时盖上锅盖(gài )焖。
