做法:春(chūn )笋切成(chéng )片后加少许(xǔ )盐捞出后用清水(shuǐ )浸泡,生(shēng )姜切片(piàn ),葱切成段。锅烧热(rè ),倒入2勺油,放入生姜、春笋、牛(niú )肉(ròu )片、葱(cōng )段(duàn )翻炒1分钟左右。再加入生抽、老抽、蚝(háo )油(yóu )翻炒均匀,加入少量清(qīng )水半掩住春笋,盖上锅盖大火煮开(kāi )后转中火。煮(zhǔ )到水快熬(áo )干的时候加(jiā )入盐,翻炒均匀稍收汁时盖上(shàng )锅盖焖。
