做法:洗净宰(zǎi )好鲫鱼,洗净淮山和薏(yì )米。用清水(shuǐ )把陈皮泡软,拍裂一小块(kuài )姜,热锅,用(yòng )姜块在锅上(shàng )擦一遍,放两勺油,待油六成热下鱼,煎至微黄(huáng )。煮(zhǔ )沸(fèi )瓦煲(bāo )里的清水(shuǐ ),放(fàng )入煎(jiān )煮好的鲫鱼和其他(tā )材料,武火煮沸,转中(zhōng )小火煲一个半小时,下盐调味即可品尝。
