做法:春笋切(qiē )成片后(hòu )加少许(xǔ )盐(yán )捞出后用清水(shuǐ )浸泡,生(shēng )姜切片,葱切成段。锅烧热,倒入2勺(sháo )油,放入(rù )生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟左右(yòu )。再(zài )加入生(shēng )抽(chōu )、老抽、蚝油翻炒均匀,加入(rù )少量(liàng )清水(shuǐ )半掩住春笋,盖上锅盖大火煮开(kāi )后转中火。煮到水快熬干(gàn )的时候加入盐,翻炒均匀稍收汁时(shí )盖上锅盖焖。
