做法:洗净(jìng )宰好鲫(jì )鱼,洗净淮山和薏米。用清水把(bǎ )陈皮泡软,拍裂一小(xiǎo )块姜,热锅,用姜块(kuài )在锅(guō )上擦一遍,放两勺油,待油六(liù )成热下(xià )鱼,煎至微黄(huáng )。煮(zhǔ )沸瓦煲里的清水,放入煎煮好(hǎo )的鲫鱼和其(qí )他(tā )材料,武火煮沸,转(zhuǎn )中(zhōng )小(xiǎo )火(huǒ )煲(bāo )一个半小时,下盐调味即可品尝。
