做(zuò )法:春笋切(qiē )成片后加(jiā )少许盐捞出后用清水浸泡,生(shēng )姜切片,葱切成段。锅烧热,倒入2勺油(yóu ),放入生姜、春(chūn )笋、牛肉片、葱段(duàn )翻(fān )炒1分钟左右。再加入(rù )生抽、老抽、蚝油翻炒均匀,加入少量清(qīng )水半掩住(zhù )春(chūn )笋(sǔn ),盖上锅盖大火煮开后(hòu )转中(zhōng )火。煮(zhǔ )到(dào )水快(kuài )熬干的时候加入盐,翻炒均匀稍收汁时盖上锅盖焖。
